Capa Di Roma spinach Lasagna

The Perfect Spinach Lasagna

Tonight we’re making spinach lasagna, a perfect family dish and a great alternative to meat lasagna for those trying to incorporate more vegetables or avoid meat.  This recipe takes about two hours to make from start to finish and yields 12 servings. What you’ll need:
  • 20 lasagna noodles
  • 2 tbsp. evoo
  • 1 cup fresh mushrooms, chopped
  • 1 cup onion, chopped
  • 2 cups spinach
  • 1 tbsp. garlic, minced
  • 2 tsp. dried oregano
  • 2 tsp. dried basil
  • 2/3 cup grated Romano cheese
  • 3 cups fresh ricotta cheese
  • 1 cup grated Parmesan cheese
  • 1 egg
  • 3 cups shredded mozzarella cheese
  • 3 cups tomato sauce
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper
Step 1: Preheat your oven to 350 degrees to start.  First, we are boiling the lasagna noodles, so bring a large pot of water to boil and toss in the noodles for about eight minutes then drain. Step 2: In a large pan over medium heat, pour a little olive oil and cook your mushrooms, onions, and garlic until the onions soften. Let vegetables cool and move on to the spinach.  Boil the spinach for a few minutes and drain.  Drain excess liquids from all vegetables.  Chop the spinach. Step 3: In a large bowl, combine chopped spinach, Romano cheese, ricotta cheese, salt, oregano, basil, pepper, and egg.  Add sauteed vegetables and beat with an electric mixer on a low speed. Step 4: In a medium baking dish, lay lasagna noodles side by side in one layer.  There will be three layers so spread one third of your mixture over the noodles and then one cup of mozzarella and Parmesan cheese.  Repeat this layering process two more times. Step 5: Cover your spinach lasagna with aluminum foil and bake in the oven for one hour. Let us know how you like this recipe!

Capa Di Roma Seafood

Frutti di Mare Recipe

Have you ever tried Frutti di Mare? This one is for anyone who can’t get enough of seafood! In any seaside Italian city, you will find a frutti di mare dish on the menu.  It’s usually with a base of spaghetti or linguine, and filled with a mixture of tasty, fresh seafood like scallops, clams, mussels, and shrimp.  This dish is a bit more complicated since there are several ingredients, but it will be well worth it! What you’ll need:
  • 1 tbsp. extra virgin olive oil
  • 10 ounces spaghetti
  • 1/2 cup dry white wine
  • 2 cloves garlic, minced
  • red pepper flakes
  • 12 littleneck clams
  • 3/4 cup tomato sauce
  • 12 mussels
  • 10 shrimp
  • 4 large sea scallops, cut or 10-12 small scallops
  • calamari – optional
  • 1/4 cup fresh parsley, chopped
  • salt and pepper to taste
Step 1: Bring a large pot of water to boil.  In a separate pan, heat your oil over medium heat and saute garlic until browned.  Add red pepper flakes and stir for one minute. Step 2: Add wine and clams and cover.  Cook for 5-7 minutes over medium heat.  Cook your spaghetti in the large pot in the meantime. Step 3: Remove the cover of your pan, and simmer for one minute.  Add tomato sauce, salt and pepper and stir.  Add in the other seafood and cook until the clams and mussels open.  Grab your pasta with tongs right from the large pot, let the water drain off, and add it to the pan of sauce.  Add parsley at the end and buon appetito!

Capa Di Roma Shrimp Scampi

Shrimp Scampi in Two Easy Steps

Shrimp scampi is a crowd pleaser, and even better, it’s pretty easy to prepare!  In today’s post, we’re sharing a great recipe for this dish that’s also a lighter dinner option for yourself and the family.  This recipe will make about 4 servings. Let’s get cooking! What you’ll need:
  • 1 lb. jumbo shrimp, shelled and deveined
  • 1 lb. pasta of your choice (we love spaghetti or linguini)
  • 4 tbsp. Capa di Roma extra virgin olive oil
  • juice of one medium lemon
  • 1 clove of garlic, finely chopped
  • 1/3 cup fresh parsley, chopped
  • 1 medium onion, finely chopped
  • salt and pepper to taste
  • grated parmesan cheese (optional)
Now this is only a 2 step recipe!! Step 1:  Boil a pot of water for your pasta and throw it in while you cook your shrimp.  In a medium skillet, heat your oil over medium heat and add all ingredients except the cheese.  Sautee all ingredients, stirring often, until the shrimp are pink. Step 2: Combine with your pasta, drizzle a little more olive oil if desired, and sprinkle with cheese.  Buon appetito!
