Catering with Roma Restaurant in East Hartford

  • Two 2-liter sodas
  • 12 bottled waters

  Catering Package 3: Ziti, Broccoli and Chicken For $15 per person:
  • A large tray of ziti, broccoli and chicken
  • A small tray of garden or caesar salad
  • A small tray of brownies (or cannolis, $1 each)

Catering Package 4: Chicken Parmesan and Ziti For $20 per person:
  • A large tray of chicken parmesan
  • A small tray of ziti marinara
  • A small tray of garden or caesar salad
  • A small tray of brownies (or cannolis, $1 each)

  • Two 2-liter sodas
  • 12 bottled waters

Capa Di Roma spinach Lasagna

The Perfect Spinach Lasagna

Tonight we’re making spinach lasagna, a perfect family dish and a great alternative to meat lasagna for those trying to incorporate more vegetables or avoid meat.  This recipe takes about two hours to make from start to finish and yields 12 servings. What you’ll need:
  • 20 lasagna noodles
  • 2 tbsp. evoo
  • 1 cup fresh mushrooms, chopped
  • 1 cup onion, chopped
  • 2 cups spinach
  • 1 tbsp. garlic, minced
  • 2 tsp. dried oregano
  • 2 tsp. dried basil
  • 2/3 cup grated Romano cheese
  • 3 cups fresh ricotta cheese
  • 1 cup grated Parmesan cheese
  • 1 egg
  • 3 cups shredded mozzarella cheese
  • 3 cups tomato sauce
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper
Step 1: Preheat your oven to 350 degrees to start.  First, we are boiling the lasagna noodles, so bring a large pot of water to boil and toss in the noodles for about eight minutes then drain. Step 2: In a large pan over medium heat, pour a little olive oil and cook your mushrooms, onions, and garlic until the onions soften. Let vegetables cool and move on to the spinach.  Boil the spinach for a few minutes and drain.  Drain excess liquids from all vegetables.  Chop the spinach. Step 3: In a large bowl, combine chopped spinach, Romano cheese, ricotta cheese, salt, oregano, basil, pepper, and egg.  Add sauteed vegetables and beat with an electric mixer on a low speed. Step 4: In a medium baking dish, lay lasagna noodles side by side in one layer.  There will be three layers so spread one third of your mixture over the noodles and then one cup of mozzarella and Parmesan cheese.  Repeat this layering process two more times. Step 5: Cover your spinach lasagna with aluminum foil and bake in the oven for one hour. Let us know how you like this recipe!

Wines to Try This Fall (And What to Pair With Them!)

It feels officially like fall here, and we’re transitioning our dishes to fit with the season! One of the most fun ways to get in the spirit of any new season is to try some different wines!  Today we’re looking at which wines work best with all things autumn and we’re giving you some pairing options too to get the most out of them! Reds — Light to medium-bodied red wines with a wide range of spices go well with many autumn dishes and bring you right into the season feeling.  Our picks are Syrah, Grenache, Pinot Noir.
  • Syrah – play with your spice rack for this one. Allspice, clove and mint really bring out its flavor and fit into a number of fall dishes.
  • Grenache – goes perfectly with braises and stews. Long, slow cooked roasts of pork or lamb make a great compliment to this wine.
  • Pinot Noir – creamy soups like butternut squash based soups bring out the fruity tones of Pinot Noir.
Whites — Viognier, Roussanne or Chardonnay make excellent compliments to fall meals.
  • Viognier – It’s easy in the fall to throw some cinnamon into your dishes, and it will bring a flavor blast when paired with this white.
  • Roussanne – the rich flavors of this wine will be brought out by roast pork or veal.
  • Chardonnay – this favorite is the perfect match with simply seasoned chicken or pork.
