Bring On the Comfort Food — Our Favorite Cream Sauces!

Given that we are well into comfort food season (our favorite season of them all ;) ) we're highlighting our favorite cream based sauces to satisfy all your hearty pasta dish cravings this winter. There are few dishes cozier than pasta and tossed in these rich creamy sauces, we can't think of a better December dinner!  Here are our favorite recipes, tell us yours on our Facebook page!

1. Penne alla Vodka



A simple and delicious recipe and as always, we are using our signature Capa di Roma Marinara Sauce and olive oil to get that authentic Italian flavor! If you're looking for an easy to prepare dinner for yourself and the family, you've come to the right place!

What you'll need:
  • 1 jar (16 oz.) Capa di Roma Marinara sauce
  • 1 pound penne 
  • 1 cup vodka
  • 2 cloves of garlic (minced)
  • 1 medium chopped onion
  • 2 tbsp. Capa di Roma Olive Oil
  • 1 cup of heavy cream
  • 1 tbsp. butter
  • salt and pepper to taste
  • a small bunch of arugula (optional for garnish)
  • parmesan cheese to top it all off!

Step 1: Boil the water for your pasta, and toss it in.  (We prefer ours al dente!)

Step 2: In a saucepan, saute your minced garlic, chopped onion, olive oil and butter for a few minutes.

Step 3: (Slowly!) pour in your vodka and let your mixture cook over medium heat for about 3 minutes.

Step 4: Add your Capa di Roma Marinara sauce and reduce heat to a simmer.

Step 5: Add your cup of cream and stir well.  Add salt and pepper to taste.

Step 6: Pour your sauce over the penne and top with some arugula and lovely grated cheese!

2. Fettuccine Alfredo



The perfect pasta indulgence: fettuccine alfredo.  This creamy sauce ALWAYS hits the spot and the best part is, it takes no time to whip up!  

This recipe yields about 6 servings.

What you'll need:
  • 10 oz. fettuccine
  • fresh chopped parsley
  • 1/2 cup butter
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • pinch of black pepper
  • 1/2 tsp. salt
Step 1: Cook your pasta following the instructions on the package.

Step 2: In a small sauce pan, melt your butter and cream over a medium-low heat and stir continuously.  When the butter is fully melted, add in your cheese, salt and pepper.  

Step 3: Drain pasta, and pour sauce over.  Mix in your fresh parsley and buon appetito!
 

3. Pasta alla Carbonara 



Pasta alla carbonara is a traditional dish from Rome, typically make with spaghetti.  It is definitely an indulgent dish, but it can be whipped up in minutes and will satisfy that creamy craving when you have it.

What you'll need:
  • 1 lb. spaghetti
  • 3 eggs
  • 1 garlic clove, minced
  • 1 cup grated pecorino cheese
  • 1/2 lb. pancetta
  • 1 tbsp. olive oil
  • salt and pepper to taste
Step 1: Get your spaghetti going.  Bring a pot of salted water to boil and cook your spaghetti to al dente per the instructions on the package.

Step 2: In a pan, pour your olive oil, garlic, and pancetta.  Sautee pancetta until browned.  Move this mixture to a large mixing bowl.

Step 3: In a small mixing bowl, crack your eggs and combine with 1/4 lb. of cheese.  Lightly beat.

Step 4: When your spaghetti is al dente, remove it from the water with tongs and place into the bowl of pancetta.  Be sure to save some of the pasta water.  It's important that this step is done quickly, as the pasta needs to be hot to combine properly with the eggs in the next step.

Step 5: Pour your egg mixture into the bowl of pasta, and toss to combine.  Add a little pasta water as necessary to keep from drying.  Add salt and pepper and top with the rest of your cheese.  Garnish with some fresh parsley too if you'd like!
