We don't know about you, but we've definitely started incorporating more and more soups into our days lately! It's feeling like fall out here and nothing warms you up quite like a warm cup of soup! and join us as we whip up this classic and comforting meal!
What you'll need:
- 1 can (28 oz.) crushed San Marzano tomatoes
- 1 tbsp. evoo
- 1/2 cup heavy whipping cream
- 1 container (32 oz.) chicken broth
- 1 cup diced onion
- 1/2 cup diced celery
- 3 cloves garlic, minced
- salt and black pepper to taste
- 1 tsp. white sugar
In a large pot, heat olive oil over medium-low heat. Add in garlic, onion, celery and a pinch of salt, stirring for about one minute.
Pour in your chicken broth and tomatoes. Bring to a simmer and add your fresh ground black pepper to taste. Simmer until vegetables are tender, about 40 minutes. Add in your sugar.
In an immersion blender, blend mixture until smooth. Then transfer to a bowl and whisk in the cream. Adjust thickness of soup if neccessary, adding broth if too thick and stirring longer if too thin. Garnish with fresh basil leaves if you'd like and buon appetito!
