Amaretti Cookies for the Holidays!

We're already thinking about the different holiday desserts we'd like to prepare for the upcoming season, and amaretti are always a safe choice! These traditional, Italian almond cookies are delicate and light, while packed with intense flavor and are super simple to whip up.  This recipe will make about 30 cookies.
  • 2 1/2 cups of almond flour
  • 1 tsp. almond extract
  • 1 tsp. vanilla extract
  • 3 egg whites
  • 1 1/4 cup baker's sugar
  • powdered sugar for garnish
Step 1: Preheat your oven to 300 degrees F and prepare your baking sheets with parchment paper.  

Step 2: Blend almond flour and sugar in a food processor and then add vanilla and almond extract, pulsing for several seconds.  Next, add the egg whites and continue to mix until you reach a smooth consistency.

Step 3: In teaspoons, place dough balls on your baking sheets and cover with a light layer of sugar.  Bake in the oven for about 25 minutes or until golden.  Allow to cool completely to reach the crisp consistency of a traditional amaretto cookie.  Dust with a layer of powdered sugar if you'd like.

Enjoy them as is, or cumble them up and toss them into a batter for bread, pancakes, or ice cream to add an extra burst of almond flavor!
