We have the best recipe for making your own caesar salad dressing at home! It has intense flavor, and all the creaminess you expect in a caesar, that you sometimes can't find from a restaurant. Honestly, after finding this recipe, we can never go back to store bought caesar again, as it's so fresh and additive free!
This recipe makes enough for about 10 servings of salad, but has no preservatives so it has to be refrigerated and eaten up quickly!
What you'll need:
- 8 anchovies (if you don't like anchovies, you can leave them out, but they add great flavor!)
- 2 tbsp. Dijon mustard
- 1 tbsp. balsamic vinegar
- 2 tsp. Worcestershire sauce
- 4 cloves garlic
- juice of half a lemon
- 1/2 c extra virgin olive oil
- 1/2 c parmesan cheese
- salt and pepper to taste
In a food processor, combine all ingredients except the olive oil. Mix with a few short pulses before adding in olive oil.
Add olive oil slowly and in parts with pulses in between to ensure even disperision of ingredients. Mix until almost creamy.
Toss with chopped romaine lettuce and any other toppings of your choosing and enjoy!
