As you probably already know, biscotti are a delicious and traditional italian cookie that is typically enjoyed with coffee or a decadent cappuccino! Today we are bringing you a recipe that we love for almond biscotti from scratch that won't disappoint!
This recipe will make about 25 cookies and will take about 30 minutes in prep time and 1 hour and 20 mins to cook.
What you'll need:
- 2 cups all purpose flour
- 1/2 cup white sugar
- 1 tsp. baking powder
- 1 tsp. vanilla extract
- 3 eggs
- 1 cup of slivered almonds
- pinch of salt
In an oven heated to 350 degrees F, lay your almond slivers out to toast for about 8 minutes.
In a medium mixing bowl, combine your eggs and vanilla extract in a bowl and beat lightly. In another mixing bowl, combine your flour, baking powder, sugar, and salt. Slowly add you egg mixture into the other mixture, beating as you go with an electric mixture until a dough forms. Add in your almonds.
On a floured surface, roll your dough out into a log, and place this log on a baking sheet to be cooked for 30-40 minutes at 300 degrees F. You want this log to be firm but not too hard, because you still will need to slice your cookies.
Let the log cool for about 10 mintues before transferring it to a cutting board. Cut into 1/2 inch thick slices and lay these slices out on the baking sheet to cook for another 20 minutes or so at 300 degrees. Flip the biscotti and cook for another 20 minutes on the other side. Let them cool before enjoying!
