Four Simple Appetizer Ideas

In the spirit of spring and this lovely warm weather coming in, we're giving you a few ideas for different, simple appetizers to enjoy for your next party! You might have some fun events coming up in your social calendar going into spring, so we thought we'd provide a few options for snacks and mini dishes you can prepare easily.

1. Caprese Salad - on sticks or in traditional form

A popular favorite, caprese salad is already pretty easy to prepare: it just takes fresh mozzarella cheese, tomatoes, fresh basil leaves and oil and balsamic vinegar drizzled on top.  An easy twist on the traditional salad, however, is to make up little skewers.  Using grape tomatoes and mini mozzarella balls, you can whip up this easy appetizer in no time and it's even easier for the other guests at the party to enjoy.

2. Bruschetta

This is another staple and requires no time to prepare.  Diced fresh tomatoes, garlic, fresh basil, parmesan cheese, oil, and balamic vinegar make a lovely spread to serve over toasted French bread.

3. Cold cuts and cheese over mini toast

Anyone that's been to Italy knows that at any aperitivo (or gathering for that matter) you can find some form of fresh bread or toast with a selection of cold cuts and aged cheese.  Garnish with a little fresh arugula or basil leaves and voila! Stacking prosciutto and a wedge of cheese on a toasted piece of bread is a delicious mini sandwich that everyone can enjoy.

4. Sun dried tomato spread - served  over bread

This spread is a little more involved, but worth it!  In a food processor, blend 3/4 cup dried tomatoes, 6 ounces of tomato paste, 2 tbsp. chopped basil, 1 tsp. crushed garlic, 1/4 cup olive oil, 1 tsp. garlic salt, 1/2 tsp. salt, and 1 tsp. of sugar.  Serve as a spread over toasted bread and enjoy!
