Today we are whipping up the Italian classic dessert, tiramisu! For such a famous sweet, tiramisu is not too difficult to make so we are breaking it all down for you here. This recipe will make about 8 servings.
What you'll need:
- 8 in. square baking dish
- 2 packages of lady finger cookies (try to find a high quality brand!)
- 6 egg yolks
- 1 lb. mascarpone cheese
- 3/4 cup white sugar
- 2 tbsp. cocoa powder
- 3/4 cup milk
- 1/2 tsp. vanilla extract
- 1/4 cup fresh espresso (room temperature)
- 2 tablesppon rum
Preparing the filling. In a medium heat proof mixing bowl, combine your egg yolks and sugar. Set this bowl over a saucepan of simmering water. When the sugar dissolves, add your milk and whisk for about 10 minutes.
Remove the bowl from the heat and whisk the custard. Let it cool for a few minutes. Put your mascarpone into another large bowl and fold your filling into the cheese. Whisk until smooth.
Line your baking dish with plastic wrap. In a small (preferably square or rectangular) bowl, combine your room temperature espresso and rum. You are going to use this bowl to dip your lady fingers in. Dip your lady fingers one by one into the espresso mixture and lay the first layer in your baking dish. Pay attention to how long you dip your cookies, you don't want them to be soggy. Over this layer, add a generous layer of mascarpone cheese. Repeat with another layer of cookies lined in the opposite direction.
At your top layer, finish off with a layer of cheese and dusted cocoa powder. Save a little cheese for the next morning as you will need to add another layer. Cover the whole dsih with plastic wrap and refrigerate overnight. Then place a plate over the top of the dish and flip over. Remove the dish and plastic wrap and add a layer of cheese and dusted cocoa powder to your "new" top layer.
