Today we have a recipe for you that's not necessarily the quickest dish to whip up, but it's a classic dish and there's nothing like it when made from scratch — tortellini!
Making pasta from scratch like this is a really fun activity if you've never done it, and is well worth the effort! We are showing you how to make cheese tortellini today so let's get to it!
What you'll need:
- 2 cups fresh ricotta cheese (for filling)
- 2 cups all purpose flour
- 3 eggs
- 1/2 teaspoon salt
- a pasta machine
- a bowl of water
- a baking sheet
: First we have to make the pasta dough. Combine your flour and salt in a mixing bowl and mix with a fork.
: Create a small well in the center of this mixture and crack your eggs inside. Stir ingredients together until fully combined.
: Prepare a space on your counter with dusted flour and transfer your dough to this surface. Knead your dough, folding it on itself as it starts to get drier.
Let your dough rest, covered in a bowl for about 30 minutes.
Sprinke your baking sheet with flour and transfer your dough. Divide the dough into sections. Set your pasta machine to the thickest setting.
With your hands, flatten one section of dough before feeding it into the machine. Let it pass through the machine several times on this setting before gradually setting the machine to thinner and thinner settings.
When all your dough is flattened on the thinnest setting, you will use a knife or rolling cutter to cut a kind of wide grid, creating squares of dough.
In the center of each square, place about a teaspoon of your ricotta cheese. Be mindful to not over fill your tortellini.
: Fold first diagonally, matching up the corners. Then you want to pat down lightly around the filling, defining that little pocket and making sure everything is packed in well. Then you want to bring the outside two corners together. You can add a little twist before bringing those corners together, or you can just pinch them directly to one another.
: Bring a large pot of water to a boil and add your tortellini a few at a time. When the tortellini begin to float at the surface of the water, they are done. It should be about 5 minutes.
: Cover with your favorite sauce
or just some oil and grated cheese, and enjoy!!
