3 Easy Vinaigrette Salad Dressings

Now that we've established olive oil's role in the famous Mediterranean Diet, we thought we could bring you a few super easy vinaigrette salad dressing recipes.  If you haven't already made this change to your diet, a great place to make a healthy substitution is with your salad dressing.  Creamy, heavy dressings like ranch are filled with not-so-great-for-you ingredients that practically outweigh the health benefits of all those great vegetables in your salad!

So, in classic Capa di Roma fashion, we are going Italian style with this one, and opting for a lighter, healthier choice!  Most often in Italy, people dress their salads with just olive oil and balsamic vinaigrette.  And with a great, high quality balsamic, that makes a really delicious dressing.  In addition to this option, we have three other light dressings you can whip up for tonight's salad.

Dressing #1: Classic Balsamic
  • 2 tablespoons evoo
  • 2 tablespoons balsamic vinegar
  • 1/2 tablespoon crushed garlic clove
  • 1/4 teaspoon ground mustard
  • salt and black pepper to taste

Dressing #2: Italian Vinaigrette
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon minced garlic
  • 1/4 teaspoon Italian seasoning
Dressing #3: Basil Vinaigrette
  • 2 tablespoons evoo
  • 1 teaspoon apple cider vinegar 
  • 1/2 teaspoon honey
  • 1 tablespoon chopped fresh basil
